FREEDOM: LIBERTY OF THE PERSON FROM SLAVERY, DETENTION, OR OPPRESSION.
I woke up this morning to the ringing bells of my new found liberty. No longer am I a slave to school and that has taken a metric shitload off of my back. Now, I can focus on my recovery while studying from home, which believe it or not makes a huge difference.
I didn’t get to make breakfast for my brother because he woke up before my mom left for my grandma’s appointment. Darn, I was looking forward to making him some buttery waffles!
He needs as much fat as possible as well. We are both lil’ sticks, hehe. Thanks to my feelings of freedom, I didn’t even care about nutritional value this morning so I ate whatever I wanted without worrying about protein. WOO! I had 1/2 a whole wheat pita pocket, stuffed with Stonyfield Farm Blueberry yogurt and of course… blueberries! I accompanied that with a Marshmallow Lovers Swiss Miss hot chocolate.

The day started off abnormally dark thanks to last night’s stormy weather. I love going to sleep to the sound of falling rain, it is so peaceful. That’s why I call the rain nature’s lullaby. I didn’t have much to do considering everyone was at school so I continued reading The Taming of the Shrew for English class. Has anyone seen the movie with Elizabeth Taylor? I find Lucentio to be mildly attractive… what do you think? Doesn’t his beard just excite you? Speaking of beards, check out this guy:
I think he took it too far.
Lunch: I made pizza in a bowl. The idea just came to me. It looks utterly disgusting but it was fantastic. I posted a recipe for it in the recipe page for those of you interested and not turned off by its’ appearance

My mom’s friend Ximena came over. She’s a nice woman. I love her daughter Francesca. She has been so supportive to me through my ED. When you go through an obstacle in life, you really realize who your true friends are. When Ximena left, I headed to school really quickly to talk to my biology teacher and then went to HEB to buy more Think Thin bars. I really recommend those as snacks (please don’t use them as meal replacement bars as the wrapper suggests) to anyone trying to gain weight. They have 240 calories, no sugar, and have 20g of protein. 20!
Before I knew it, it was snack time. I had my usual Carnation Instant Breakfast (rich milk chocolate flavor), a handful of almonds, and a mini granny smith apple. So cute!

Delicioso.
After this, I started working on my biology project… sort of. Yes, I am the queen of procrastination. But hey, who wants to do homework? Uh.. NO ONE! My new blackberry came in since mine decided to go awall. Its amazing how new phones (even if they are the same exact model) look so much more beautiful when they are brand spankin’ new. Just goes to show how careless we are with our things. Naughty Naughty.
Finally dinner came and I was really excited. I had crumbled lean ground beef with lentils and chopped baked plantain. A traditional Colombian dinner. Oh baby was that good.
I hadn’t had enough calories or fat up until then so guess what I had… DESSERT! On my own for no special occasion. I haven’t done that in forever. I had Stonyfield Farm Gotta Have Vanilla frozen yogurt topped with pecans and chocolate syrup. Its okay to indulge in a dessert

Post-dessert: I became very, very hyper and performed Japanese songs in a sports bra and booty shorts for my family. Hahaha even my mom joined in! Moral of the story though: do not give Karina too much sugar in one sitting in large quantities. It is a recipe for Japanese Kitten disaster.
After my dancing and singing, it was bed time! But I hadn’t had my bed time snack
so I had an iced oatmeal raisin Luna Bar and chocolate almond milk.
I think this flavor or the Chai Tea is my favorite. If you do not eat Luna Bars, please buy some
Ohhh dear. My tummy hurts and now I am experiencing a sugar crash
I’m going to hit the hay. I have to wake up at 8:50 so I can start watching a movie that will be showing on TV at 9:25. Goodnight to all!
<3 Karina

Thank you, it makes me really happy to hear that!
I was actually hoping that others would be able to relate well because I know how lame it is to feel alone while recovering. Knowing that others are going through the same thing and watching them progress and move on with life just makes everything sooo much easier. Good luck recovering, girl <3

wow! plantains! I have never tried them before yet. you have the most interesting eats! I made pizza in a bowl, something like that too! Mine was hawaiian pizza style. hee hee.
hmm…I’m surprised you recommned Thinkthin bars for weight gain? Isn’t the purpose of that bar to help you lose weight or something?

Ohh hawaiian pizza in a bowl sounds amazing!
and yes, as a Colombian girl, I believe that plantains make a very savory addition to every meal. I love them! Try them baked or even fried if you get the chance
and yes, when used as a meal replacement bar, like slimfast, they will make most lose weight due to calorie reduction. when eaten as a snack though, they have about as many calories and MORE protein that ensure shakes and such. hmm… maybe i should have been more specific! i’m gonna edit my post and include that they are helpful in weight gain as a snack and NOT as meal replacement.

Hi!
I just found your blog, and I love it. Your pictures are awesome. I am trying to gain weight as well, and you have some great inspiration for me for different food ideas. I <33 pizza, so perhaps I will give that “pizza-in-a-bowl” a try. C:
P.S. I love hot cocoa in the morning too!
