RapCat, PencilCat, & Carrot Cake.

Hahaha, am I so lame that I find that amusing?
My siamese kitten, Sanura’s ears perked up when I played this and she started looking around for another cat in the house. She hates it when I bring in other cats, and my dog does as well. But what can I do if my heart is big enough for all the animals in the neighborhood?<3
First thought when I woke up: MY LEG ITCHES LIKE A MOTHERRR! Sure enough, last night’s not-so-successful walk caused my leg to make a few new friends: 3 red mosquito bites. Argh. Anyways, I had a pretty simple breakfast because I was getting bored of the typical Kashi bowl and I didn’t feel like thinking much considering all the cooking I was going to be doing tonight (tomorrow we’re throwing grandma a huge birthday party). I had 2 slices of toasted Ezekiel bread with a little Brummel&Brown spread, 2 Applegate Farms chicken&sage breakfast sausages, and a Carnation Instant Breakfast vanilla strawberry smoothie (I’ll post this simple recipe under my recipes page.)
While I ate breakfast, I suppose my cat confused my leg for a small miniature poodle named Cosmo (AKA my dog, whom she loves to attack) because she started slapping and jumping on it!
Last time I checked, my legs were not fluffy and snow white! Oh, speaking of cats. I spent my study breaks drawing a cat rather than something morbid. It didn’t turn out perfect but I am still rather proud of it.
So, I was feeling mediterranean at about 12:30 pm today and had a very delish lunch. 1/2 a whole wheat pita, hummus, Horizon organic mozarella cheese stick, mini granny smith apple, and Oikos greek yogurt with crushed almonds and honey.
I felt like I had just finished an eating competition after that. It was a VERY filling lunch but so delicious!
When lunch was over, my time in the kitchen still wasn’t. I ended up making lunch for my brother (one PB&J bagel, and one cream cheese bagel), my dad (tuna melt and soy chips), and my cute grandma (major fruit smoothie). I love cooking for others. Apparently, I make a mad sandwich
Ok, so the food I am about to share with you guys could be an important piece of information to some, so listen up! Bobo’s Oat bars could be a weight gainer’s heaven (I know not everyone reading this is trying to gain weight, but to those that are, this is gold!). A whole bar (depending on the flavor) has almost 400 calories and 16 grams of fat. These bars are not very big at all, yet they pack in alot of energy without making you feel stuffed. Oh and they are DELICIOUS!!!
I had the peanut butter flavor with some green tea.
Before I knew it, it was already 5! I had to start making the first cake for my grandma’s party, which was Carrot Cake using no diet products, baby. Muahaha, tomorrow is the real deal! But ok, get this: I had to grate 5 cups of carrot. That was about 10 carrots, which really takes a toll on your arm (which I really thought was going to fall off, by the way). My mom had told me that dinner would be ready by 6:30 so at around 5:15, I had a little snack. A very, very little snack. 1/4 c. of cottage cheese and a cut up strawberry.
Ok, so obviously after that little thing, I was still hungry. But I prevailed in controlling my hunger and kept making my cake. I refused to use the electric beater, so it was a really tiring process. I pour my heart into my cooking, I don’t want to cheat by using technology! I checked back at the clock and it was 6:45, mom hadn’t even started making dinner. I was STARVING. I let her know how I felt and she got on it, but by 7:30, I was so weak and tired that I felt like passing out. Blech. I eventually ate though, thank the lord.
Dinner was a typical grilled chicken breast and plantain. I had another mini granny smith apple with cinnamon afterwards for dessert. I am a true cinnamon addict. Whenever I was in the Ensure and Boost phase, my favorite bed time treat would be a microwaved vanilla or butter pecan shake topped with A LOT of cinnamon. Aaah that kind of makes me want one now! >.<
I finished my carrot cake after dinner and it turned out pretty swell! The frosting is of course a traditional cream cheese frosting.
Once I finished this cake, I had to wait a while before I could bake the apple spice cake. That one is a family favorite made famous by my mom, who passed the recipe onto me when I grew up. This will only be my second time making it, so I have to make sure it tastes amazing and hopefully it will live up to my mother’s! You’ll have to wait to see that cake in tomorrow’s post though :p Mmm.. I love to bake. Anyway, while I waited for the oven to be free, I watched Family Guy with my brother.
GIGGIDY.
Update!!: change of plans, I ended up being too tired to bake the cake, so I’ll be getting on that when I wake up tomorrow.
Bedtime snack: I needed something that would boost my energy and replenish me a bit so I had oatmeal with maple syrup, cinnamon, and a crumbled Earth’s Best Sunny Days snack bar (apple flavor). Yeah, those are for kids but they’re awesome!
Sorry for such a cruddy picture.
I’m going to watch some TV and then hit the hay. Grating those carrots pooped me out! Hopefully my arm is still attached to me when I wake up tomorrow. Its going to be a long, but fun day!
Love, Karina

Oh…MY god. I love cats too! (the crazy-kind-of-love). I don’t have one because my mom doesn’t like them, but I’m definately getting a cat once I move out. And the rapcat mv? It totally rocks my socks.
I love all your eats! Everything looks so tasting and uh, may I steal some? You’re really good at drawing cats! I can’t draw “real life” cats, I only draw the cartoon kind.
You’re a really good baker! Your grandma’s birthday cake looks amazing. I could never bake something nearly as good. I can’t even bake.. :O
Anyways, I read some of your other posts, and I absolutey LOVE bars too! A big fan of ‘em
I hope you have a great time celebrating your grandma’s bday!
