Sorry I’ve been so flaky lately with my posts. Life has been busy and chaotic! Things are suddenly looking up now though since…. I switched psychologists! Remember Dr. H? The jerky doctor I talked about last week comparing him to Dr. Hill from Re-Animator? Well, he is loooong gone because I have switched to a MUCH kinder doctor. No offense to Dr. H :D ! 66153-10No, don’t make that face at me, Dr. H! :p

Ok, All jokes aside, here is what I ate yesterday. I’m gonna keep yesterday short and simple. breakfast-copyCrushed Weetabix and Stonyfield Farm blueberry yogurt topped with blueberries and chopped bananas with Applegate Farms chicken & sage breakfast sausages. It was kind of like a delicious cold and fruity porridge! lunch1-copylunch21Lunch: Gardenburger on an Ezekiel english muffin with ketchup and a ThinkThin chocolate fudge bar.yogurt-copy1Snack: Oikos yogurt sweetened with strawberry syrup and almondsapplez-copySnack numero dos (number 2 for those who don’t hablar spanish!): apples and cinnamontomatoes-copyDinner: chicken breast, cherry tomatoes, and plantain! Today: May 5th

I woke up in a rush at 7 AM because at 9 I had to go visit my new psychologist for the first time. I felt a little queasy (due to nervousness) and had a small breakfast. I think it was too early to be super hungry. I had Nature’s Path heritage flakes with 4 oz. of skim milk and some dried cranberries. I love how dried fruit can spice up any simple breakfast. may-5-bfast-copy

After breakfast, I went upstairs to get ready and went to the Nature’s Path website. I’ve been looking for some healthier Pop-Tarts for my brother (high fructose corn syrup is NOT cool. blech) and they have toaster pastries containing no HFCS! I was so happy because he will NOT eat the Amy’s Toaster Pops because he has a thing for eating processed food, so I am going to try for him to eat these. Yay. Before I left for the appointment, I had some Brown Cow strawberry cream top yogurt. It was heavenly, as always. may-5-gurt-copy

So when I stepped outside, I thought: “Hm.. this is the perfect day to go swimming!” Yeah… not gonna happen because my pool, is no longer a pool. It is officially the Love Bug Graveyard. Yesterday, I planned on going swimming. Unfortunately, every time I was about to get in after cleaning it, 5 more Love Bug corpses would appear! WTF!? Ugh. Anyways, my psychologist was VERY nice. He seems super understanding and I feel really positive about the new treatment I will be receiving. I think it is important to feel comfortable with the people treating you so you can trust them fully.

I discussed more with my mom about becoming a vegetarian. I know I have not mentioned wanting to start that lifestyle in any of my posts, but it is something I have been considering for a while. She finally opened her mind up a bit and is considering it. Tomorrow, I am meeting my new nutritionist for the first time and we will be discussing possibly making the shift to vegetarianism! If my nutritionist approves, I will be a lacto-ovo vegetarian. I just no longer find meat appealing.

Lunch: Tofurky & french dressing scrambled egg sandwich on whole wheat bread and dried apricots.may-5-lunch-copy1

After a cheerful lunch with my mom, I went to HEB with her for some shopping. When we returned we started watching The Taming of the Shrew with Elizabeth Taylor in honor of my reading for english class. She is so beautiful, my god! I think I have a new favorite actress. The movie was really good. I snacked on some Annie’s whole wheat bunnies and almonds. Yum.may-5-snack-copy

I worked on my biology project for a bit before dinner which could most likely have been my last time eating meat :X although, that isn’t technically correct because I thought about it for a while and I will allow myself to eat some fish. I will be a “pescetarian” but will mostly get my proteins from grains, dairy, and legumes, etc. I want to keep open to fish though if I feel the want to eat it, rather than restrict myself fully to no meat. I want a bit of freedom and I am comfortable with my choice. Dinner was filet mignon, AWESOME broccoli, and plantain.may-5-filet-copy

I went for a nice walk with my mom after dinner and we really opened up and talked about things. We tend to argue alot (especially since Anorexia came into my life) and I hope our relationship improves now that we have less stress due to changing ED clinics. I love her and want nothing more than to be her friend.

At bedtime I had an apple, a Luna Bar and some warm milk.may-5-bed-copy

Blehh, another early morning wake up tomorrow! It will be worth it though because I will be meeting the new nutritionist. Goodnight everyone!

Peace and <3, Karina

  1. hey!
great blog! keep up the good work!!

  2. All of your food looks so nice! Just out of curiosity… do you count your calories? Or do you have a calorie goal for each day? If so what is it? And congrats on (almost) becoming a pescatarian/lacto-ovo vegetarian! :) I’ve been a vegetarian for 4 years… and I’m thinking of becoming a pescatarian. I’ve been thinking this for like a year now but I always chicken out! Haha

    • Thank you :)
Sadly, my dietitian told me to stick with meat and not change my diet so extremely until I recover. I understand though, taking out or adding in an entire food group is a pretty big deal! I believe fish is very, very healthy though.
And yes, i do have a calorie goal. I just got a new one today actually so my menus are gonna be looking a little different! I start eating 2400 calories tomorrow. and then next week 2800.

  3. Those ThinkThin bars look sooooooo good! Are they only available in USA??? I’m in Canada…How much calories/protein/fat/fiber do they have?

    • Sorry, I have no idea if they are available in Canada (I would think so though because the Think product company is pretty widespread), but they have 240-250 calories, 20g of protein, around 8g of fat, and 1g of fiber. I think they are delicious and help me up my calories and protein without weighing me down too much! I really recommend them.
