Karina’s Welsh Rarebit

  • 1 1/2 tsp. worcestershire sauce
  • 1/2 tsp. dry mustard
  • dash of cayenne pepper
  • 2 tsp. onion powder
  • 1/3 c. 2% milk
  • 1 1/2 c. soft tofu (blended or stirred until smooth)
  • 3/4 c. mozzarella cheese
  • 3/4 c. cheddar cheese

Directions

In a bowl, mix the worcestershire sauce, pepper, and mustard. Set aside. Place onion powder and milk over low heat in a sauce pan, and stir. Add the worcester mixture to the saucepan, stirring. Add in the tofu and cheese slowly, alternating between the two. Be sure to continue stirring well.

Once stirred well, serve the thick sauce over whole wheat toast.
