Peanut Butter Banana Tofu Sandwich
Blend these Ingredients until desired consistency is reached:
- 1 tbsp. Peanut Butter
- 2 oz. Silken tofu (for a thicker consistency, use firmer tofu)
- 1/2 medium banana
- 1 tsp. honey
- Squirt of lemon juice
Spread this on two slices of whole wheat bread and enjoy.
Tip: Sprinkle some nuts over the spread for a nice crunch or dried fruits (raisins and cranberries are my favorites) for some chew!
